We need to come back to begins of USA when there was no cars.

They are not held on Sunday because Sunday is a holy day and everyone needs to go to church.

Elections are not held on Monday because one day could be not enough to nearest polling place. You need to think about farmers with slow horse :).

To solve those issues elections are held on Tuesday.
